Out of many, I have only ever lost as Dracula once. Against experienced and clever players. It's mostly a matter of making sure they can't deduce your movements. A few things that have really helped me:
1. Place new vampires in out of the way places as early as possible. Try and make sure that if a hero would encounter them it would likely be at night.
2. Use your movement powers often.
3. Avoid Spain (Unless the players realize that you always avoid spain, and then you can stop by)

From what I've seen, Dracula's lucky if he lasts a day or two.
