Does it become basically defeat Red Encounters and hope you dont draw Margath?

yesterday I got three dragons in a row (a new dragon on each red encounter I went to) and defeated them and got 3 runes to win

Was that legal?

If I had drawn Margath and beaten him instead of the dragons I assume I would win from that also?

Yep, the basic win condition is either you defeat Margarth OR you gather 3 Dragon Runes from defeating 3 Dragon Lords from the red encounter cards.

Other Adventure pack expansions change the winning condition and overall end goal of the adventure.

Yes. BTW, every red encounter in the base game is a dragon, even Margath, technically.
