Rulebooks says:
"If, at any time during the game, a player controls seven such areas, that player immediately wins the game."
As soon as you reach 7 castles, game over. You win. You do not need to wait until the end of the turn/round.

This is correct.
If I recall, 1st edition was the end of the turn (or our group interpreted it that way) but an immediate win makes for a more tense and strategic game.

1st edition was the same way. "If a House, at any time, controls seven areas containing Cities and Strongholds, the game is immediately over and that player is declared the winner."
